With 1 Michelin star and located in a rehabilitated old carriage of the Canfranc International Station, Canfranc Express is a gastronomic restaurant located in Canfranc Estación, a Royal Hideaway Hotel. Led by chef Eduardo Salanova and room director Ana Acín, its kitchen's main objective is to recover the Aragonese culinary legacy and awaken emotion through flavors, textures and typical products of the region using avant-garde techniques, preserving at all times the essence of the best local cuisine. The gastronomic concept of the Canfranc Express restaurant is led by chef Eduardo Salanova and restaurant director Ana Acín, whose career has led them to win prestigious prizes and awards. Together they form one of the key tandems of Spanish cuisine, whose proposal lies in the adaptation of traditional Aragonese recipes to the kitchens of haute cuisine.
Children under 14 years of age are not allowed to enter the Canfranc Express Restaurant.
Chef
Originally from Canfranc, he discovered the profession of chef at the age of 16, but acquired his expertise in the kitchen during his first years working in fine dining restaurants. He was part of the kitchen team at Echaurren (Ezcaray), during the year in which the restaurant obtained its second Michelin star. A year later he joined the team at Ángel León's Aponiente –three Michelin stars–, coinciding with the restaurant's acquisition of the second award.
In addition to leading the kitchen at Canfranc Express, he is currently in charge of the emblematic Venta del Sotón, in the Aragonese Pre-Pyrenees, together with his partner Ana Acín. In 2018, both opened the Espacio N restaurant, where creative cuisine merges with old recipes that give the Aragonese recipe book the place it deserves. In just a year and a half after its opening, Espacio N obtained its first Michelin star.
Room director
Passionate about gastronomy from an early age, Ana Acín reflects in her work her love for the dining room, professionalism and care in service and exquisite treatment of diners, generating unique moments around the table. After fifteen years at the head of the family restaurant (Venta del Sotón), together with his partner Eduardo Salanova, he undertakes the challenge of combining the know-how of the kitchen with his unique and impeccable understanding of front-of-house service.
Passionate about challenges and a lover of good cuisine, her career has always been marked by a firm defense of the products of Alto Aragón and the importance of pairing in the gastronomic experiences she directs, inviting diners to travel the world through their wines. Currently, Ana Acín combines her activity as room manager at Canfranc Express with the activity of Espacio N and Venta del Sotón.
