MuXgo Restaurant at Santa Catalina, a Royal Hideaway Hotel, is one of the most creative and innovative gastronomic offerings in our geography. Led by the Canarian chef Borja Marrero , this projects' philosophy is based on the enhancement of local produce and the manifestation of the concept of terroir. MuXgo presents a culinary experience in which circular economy is especially relevant, offering dishes that are deeply rooted in the island.
Sustainable, creative cuisine with local products. Led by chef Borja Marrero, the MuXgo Restaurant brings forward a menu made of typical products from the Tejeda area (Gran Canaria), such as corn, prickly pear and other native plant species, shrimp from Mogán, seasonal fish, olive wood charcoal from Tejeda or hand-made cheeses. Many of these products come directly from Marrero's own farm, which has its own orchards, farmyard, livestock, cheese factory and workshop, reinforcing the project's ecological and sustainable nature.

Originally from Gran Canaria, Borja Marrero studied at the Hofmann School in Barcelona alongside great names such as Ferran Adrià, Arzak and Ramon Freixa. During his international tour of the USA and Mexico, the chef opened his own restaurant and worked as a consultant and private chef for great personalities. After his return to Las Palmas de Gran Canaria, Marrero started an innovative km 0 project in his native Tejeda and in a "closed circle" format (his own orchards, farmyard, livestock, cheese factory and workshop), which gave him local and national recognition, and is now a landmark in Gran Canaria.
He has been received, among others, the first Michelin Green Star in the Canary Islands, a Repsol Sun, the "Food of Spain" 2023 Award, the Aquanaria Madrid Fusión Sustainability Award and the "Golden T" from Tapas Magazine for the Best Chef in the Canary Islands.
